Vegan Aubergine Recipe with CBD Oil


1 medium aubergine

150 grams of cooked lentils

handful of rocket

7 cherry tomatoes cut in half

20 grams of seed mix(I used mix of hemp, sunflower, linseeds, sesame)

1 tsp of nutritional yeast

1 tsp of smoked paprika

1 tsp of herbs de provence

4 drops of ULU cbd oil



For the dressing

1 tbsp of tahini

2 tsp of apple cider vinegar

1 tsp of nutritional yeast

1 tsp of maple syrup pinch of salt

3 drops of ULU cbd oil


Cut aubergine in half and score diagonally Sprinkle with spices, salt and pepper and rub very well, getting in between the cuts so it will get the maximum flavour Drizzle with olive oil(you can skip this step but it is recommended) Add few drops of ULU cbd oil and transfer to the baking sheet Bake in preheated oven for 25-35 minutes or till completely soft Meanwhile mix all the ingredients for the dressing, taste and adjust sweetness/acidity if needed. Add a splash of water to get the dressing to desired consistency When ready to serve Add a handful of rocket and part of the lentils Add aubergine halves on top followed by cherry tomatoes, the rest of the lentils Sprinkle with seeds and drizzle with ready sauce
